Watermelon Canapes

Recipe by Jo Feehan- Second Helping

A deliciously fresh and vibrant canape. Makes 24.

  • Small Seedless Watermelon (you will have watermelon left over)
  • 120gm Holy Goat La Luna cheese
  • 2 Finger Limes
  • Fennel fronds from 1 fennel bulb
  1. Slice watermelon into 24 2cm cubes
  2. Slice La Luna into 24 2cm squares about 2mm in thickness
  3. Cut finger limes in half and squeeze out the lime “caviar” the way you would squeeze a tube of toothpaste.
  4. Place the squares of cheese on top of the watermelon cubes then top each equally with the finger lime “caviar”.
  5. Finish with a small fennel frond on each of your watermelon canapés.
