Steamed Red Emperor with Aromats and Greens

Serves 2.

  • 2 x 120g red emperor fillets
  • ¼ cup boiling water
  • ½ teaspoon sugar
  • 2 tbs shaoxing wine (Chinese rice wine)
  • 2 tbs light soy sauce
  • ½ tsp sesame oil
  • 1 tbs fresh ginger, very finely shredded
  • 4 spring onions, finely julienned into thin strips
  • 2 tbs peanut oil
  • Coriander leaves picked to serve
  • Steamed Chinese broccoli to serve
  1. Half fill a wok with water and bring to the boil. Put the fish into a shallow bowl that will fit into a
    steamer basket. Dissolve the sugar in the boiling water. Pour the water, shaoxing wine, soy sauce,
    and sesame oil in the bowl with the fish. Scatter over the ginger and steam for approximately 8
    minutes or until the fish is cooked through. Meanwhile, gently steam the Chinese broccoli in a
    separate saucepan.
  2. Heat the peanut oil in a small saucepan and set aside.
  3. To assemble, plate the fish and steamed broccoli and spoon over all the cooking juices. Top with the
    spring onion and spoon over the hot oil over and let it sizzle. Top with fresh coriander and serve.
