DIRECTIONS
- Pre heat the oven to 130C
- Heat oil in a large oven proof casserole dish.
- Sauté onion and garlic on a low heat until soft (5- 10 minutes). Add all the ingredients – except for the ham hock and bring to a simmer.
- Place the ham hock on top and cover and place in the oven for 3.5-4 hrs.
- When done, discard the skin and bones from the ham hock and shred the meat into the
beans. Remove the bay leaves and serve with an optional poached egg.
