- Add sugar and 300ml water to large saucepan. Bring to a simmer, then add rhubarb and zest juice of orange and lemon.
- Cook over medium heat until rhubarb starts to break apart. Pour the mixture through a sieve, lined with a muslin cloth, into a heatproof jug. Transfer to jug for storage. Keeps for 1 month.
- This is beautifully refreshing rhubarb cordial is delicious on its own, or to make into a cocktail, add a shot of your chosen spirit. We recommend gin or vodka.
