- Combine all ingredients in a bowl. Let sit for a whole hour so that the flavours combine and saturate the ingredients.
- This pomegranate walnut salad is perfect as a side for Turkish and Middle Eastern dishes, grilled lamb or as part of a mezze.
Pomegranate Walnut Salad
Recipe by Jo Feehan- Second Helping
A delicious salad using seasonal autumn produce.
Serves 4 as a side, 8 as part of a mezze.
Ingredients
- 1 cup pomegranate seeds
- 1 cup coarsely chopped flat leaf parsley
- 1 cup roasted walnuts, chopped coarsely
- ½ cup pitted green olives, chopped coarsely
- 1 tbsp walnut oil
- 1 tbsp olive oil
- 1 tsp pomegranate molasses
- ½ tsp Sumac
- ½ lemon, juiced
