Mac and Cheese with Truffle

Recipe by Mish Delish

Feel free to grate in some fresh truffle to the cheese, for some extra decadence!

Serves 6.

  • 230g macaroni or elbow pasta
  • 3 tbs unsalted butter
  • 3 tbs plain flour
  • 1.5 cups milk
  • 1/2 tsp mustard powder
  • 1 tsp salt
  • 2 cups gruyere cheese (grated)
  • 1 cup gouda cheese (grated)
  • 3/4 cup panko breadcrumbs
  • 2 tbs unsalted butter (extra)
  • 1/2 tsp truffle salt
  1. Preheat oven to 175C
  2. Cook the macaroni in salted boiling water according to packet instructions. Drain and rinse
    with cold water to stop the cooking process. Set aside.
  3. Using the same pot that the pasta was cooked in, melt the butter and whisk in the flour. Cook
    for a few minutes, stirring constantly. Gradually add the milk, bit by bit, whisking constantly
    until you have a thick sauce with no lumps. Take off the heat and stir through the mustard
    powder and salt. Stir through the cooked macaroni and the cheese and stir to coat.
  4. Pour the cheesy macaroni into a round baking dish or cast iron pan. Melt the extra butter in a
    small saucepan and stir through the breadcrumbs to coat. Season with truffle salt. Sprinkle
    evenly over the top of the macaroni and bake for 35 minutes or until golden brown.
