Lemon Curd Tartlets

This is a very easy and pretty addition to any morning or afternoon tea. Making lemon curd in the microwave couldn’t be simpler and the pre-made tartlets from Cleo’s are a game changer!

Makes 12.

  • 2 packets ready made tartlets from Cleo’s Deli
  • 3 eggs
  • 2 egg yolks
  • ¾ cup caster sugar
  • 3 lemons juiced
  • 125g salted butter, cut into small cubes
  • Icing sugar or berries to serve.
  1. Mix together the eggs, yolks, sugar and lemon juice in a bowl.
  2. Add the butter and microwave on medium in 30 sec bursts stirring in between for about 4 – 6 minutes
    (depending on the strength of your microwave). It’s done when you have a cohesive curd that’s thick and glossy, but still pourable.
  3. Spoon into each of the tartlets and flatten off with an offset spatula or the blunt side of a knife.
  4. Dust with icing sugar or garnish with berries and serve.
