Halloumi and vegie kebabs

Ingredients
- 2 large zucchinis, peeled into ribbons
- 360 grams haloumi, cubed
- 240 grams cherry tomatoes
- 1 onion (red or brown), cut into wedges
- 1 tsp paprika
- ¾ tbsp oregano
- Olive oil
- Fresh lemon wedges (to serve)
Method
- Preheat barbecue to medium heat, soak bamboo skewers in water
- Briefly boil zucchinis for 2 mins, remove from water
- Combine zucchini, tomatoes, onion and halloumi in a bowl with paprika and oregano. Drizzle with oil and coat vegetables evenly
- Thread ingredients onto skewers and grill your vegie kebabs until lightly charred.
