- To make the pita chips, preheat the oven to 200°C. Brush the whole pita bread rounds with melted butter and sprinkle with cinnamon.
- Cut into triangles and place single layer on a baking sheet. Bake in the oven for up to 15 minutes until golden. Remove from oven and cool on a rack.
- Next, combine all the ingredients in a food processor except for the chocolate. Process ingredients until smooth. Combine the shaved chocolate with the mixture and place in a serving bowl.
- Sprinkle with extra icing sugar and chocolate shavings and serve your deconstructed cannoli.

- 2 cups ricotta cheese
- 230g cream cheese
- 1 ½ cups icing sugar (sifted)
- 1 tsp vanilla extract
- 3 pita bread rounds
- 2 tsp cinnamon
- 1 cup chocolate couverture (dark), finely chopped or shaved
- Melted butter
