- Preheat oven to 220°C. Grease a loaf tin.
- In a mixing bowl stir together flour, polenta, sugar baking powder and salt.
- In another bowl beat together eggs, milk and oil.
- Add to flour mixture and stir just until batter is smooth (be sure not to over mix).
- Pour batter into loaf tin and bake in oven for 20 to 30 minutes until golden brown.

- 1 cup flour
- 1 cup yellow polenta
- 2 to 4 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
- 2 free range eggs
- 1 cup milk
- ¼ cup oil (rice bran or canola)
