- To make the pastry, cut the butter into cubes and place all the pastry ingredients in a food processor. Blend until a ball forms.
- Wrap in plastic and refrigerate for 15 minutes.
- Roll the pastry out between two sheets of baking paper to form a circle large enough to line a flan tin.
- Slice the figs into four or five slices each.
- Spread the jam over the bottom of the pastry case.
- Lay the figs slices in circles to cover the pastry base.
- Sprinkle the figs with the sugar and bake at the bottom of the oven at 180o for twenty minutes.
- Cool for ten minutes then serve your classic fig tart with vanilla ice-cream.

Ingredients
- 30g chopped almonds
- 75g butter
- 1 egg yolk
- ½ tsp finely grated lemon zest
- 50g icing sugar
- 125g plain flour
- 6-8 fresh figs
- 1 tbsp brown sugar
- 1 tbsp fig jam
