- Preheat oven to 220°C. Place the pumpkin on a lined baking tray. Drizzle with oil. Season with salt and pepper. Toss to combine. Roast for 10 to 15 minutes or until almost tender. Keep oven on.
- Roll out Pizza dough to desired size (approx 20 cm diameter.) Place rolled out dough onto pizza stone or pan.
- Spread tomato paste onto pizza dough. Tear Mozzarella and arrange on base. Then arrange pumpkin, chorizo, chilli, spring onion on pizza base. Drizzle with olive oil, season with a little salt and bake in hot oven for 15 to 20 minutes (depending on oven) or until lightly browned.
- Remove from oven and top with rocket lettuce and drizzle with more oil.
- Slice your chorizo, pumpkin, rocket and chili pizza and enjoy.

- 100g tomato paste
- 100g fresh mozarella cheese
- 200g butternut pumpkin diced into 1cm pieces
- 1 chorizo sausage sliced thinly
- 1 red chili sliced thinly
- 1 spring onion sliced thinly
- 50g rocket lettuce
- Olive oil to drizzle
