Blackberry Salt

Recipe by Jo Feehan- Second Helping

Blackberry salt can be used to create amazing flavours with salads and it goes perfectly with lamb and game meat.

  • 60 grams salt flakes. I used Maldon
  • 8 medium blackberries
  1. Pour the salt into a bowl
  2. Add the blackberries and use the back of a spoon to crush the berries into the salt. Continue until well mixed and no large pieces of fruit remain.
  3. Cover an oven tray with paper paper, spread out salt mix and dry out in a 95 C oven for 30 minutes.
  4. Remove your blackberry salt from the oven, break up with fingers/fork and place in airtight jar.
