- Pour the salt into a bowl
- Add the blackberries and use the back of a spoon to crush the berries into the salt. Continue until well mixed and no large pieces of fruit remain.
- Cover an oven tray with paper paper, spread out salt mix and dry out in a 95 C oven for 30 minutes.
- Remove your blackberry salt from the oven, break up with fingers/fork and place in airtight jar.

Blackberry salt can be used to create amazing flavours with salads and it goes perfectly with lamb and game meat.
