Blackberry & Coconut Overnight Oats

There’s something quite smug about preparing your breakfast for the next day the night before! Waking up to these ready to go healthy and delicious oats is a wonderful thing, especially when it includes delicious seasonal blackberries from Paddlewheel.

Serves 2.

  • ½ cup oats
  • ¼ cup blackberries or other berries of your choice
  • 1 tbs chia seeds
  • 1 tbs flax seeds
  • 1 tbs sesame seeds
  • 1tbs vanilla protein powder
  • 1 cup coconut milk
  • 1 tbs maple syrup (optional)
  • Toasted coconut flakes to garnish

 

  1. Add the oats, blackberries, chia, flax seeds, sesame seeds and protein powder to a bowl and mix to combine.
  2. Add the coconut milk and optional maple syrup and stir to combine.
  3. Transfer to a large jar or two small jars, top with coconut flakes and allow to set in the fridge overnight for brekkie the next day!
