Best French Toast with sticky berry sauce

Perfect for a lazy Sunday morning brunch!

  • 3 eggs
  • 200ml milk
  • 8 slices of thick bread (brioche or sourdough)
  • 1 tbsp butter
  • For berry sauce:
  • 100g blackberries
  • 100g blueberries
  • 60g caster sugar
  • 1 tbsp lemon sugar
  • 1 tbsp shredded coconut to top
  1. Whisk the egg and milk in a bowl.
  2. Place the bread on a shallow dish or plate and pour the egg and milk mixture over the top. Allow it to soak in for a minute and then turn the bread over and soak the other side.
  3. Heat a non stick pan over a medium heat and melt the butter. Add bread to the pan and fry for one minute or until it starts to brown. Turn and cook the other side.

For berry sauce:

  1. Put half the berries in a blender with the sugar and lemon juice. Blend until smooth. Pour over French Toast and top with remaining berries and flakes of coconut.
