6 granny smith apples, sliced (I like to leave the skin on)
3-5 tbsps freshly grated ginger (depending on your love for ginger, taste as you go!)
1/2 cup coconut sugar
1 cinnamon quill
Method
Preheat the oven to 170°c. In a medium sized bowl, combine flour, coconut sugar, oats, coconut oil (at room temp) and maple syrup.
For stewed ginger apples, combine ingredients in a saucepan over medium heat with 1 tbsp of coconut oil. Stir occasionally until apples become tender (approx. 10 mins) – your kitchen will smell amazing!
Spoon stewed apples into a pie/baking dish, cover with biscuit topping, bake until the apples are bubbling and the biscuit topping is golden and crisp (approx. 20 mins).
