Our next Prahran Market Eco Champion is Harvest Hall eatery Rivergum Grill (formally Kooks Kitchen). Rivergum Grill brings a modern take on the great Australian Barbecue using the best locally grown and native ingredients available, and are passionate about sustainability in their day-to-day.
HERE’S WHY WE THINK RIVERGUM GRILL ARE A PRAHRAN MARKET ECO CHAMPION…
- They introduced a no plastic policy well before it was the norm.
- All of Rivergum’s packaging is from Bio-Pak, which is the most sustainable and environmentally friendly packaging on the market. The manufacturing is carbon neutral, made from plants (not oils) and is compostable.
- They only sell canned drinks which have 68% recyclable content rather than plastic bottles which is only 3%. All of these canned drinks are Australian made.
- The vegan salad bar is the most sustainable food option as plant-based food only requires 1/3 of the land in comparison to meat.
- 90% of produce is sourced from within the Prahran Market, using mostly locally sourced supplies. Therefore, food miles are extremely low.
- The menu is based on Flexitarian diet beliefs:
*Eating mostly fruits, vegetables, legumes and whole grains.
*Focus on proteins from plants instead of animals.
*Be flexible and incorporate meat and animal products from time to time. This is where their skewer range comes in.
*Eat the least processed, most natural form of foods.
*Limit added sugar and sweets.
