Swordfish Skewers with Burnt Butter, Ginger & Lime Sauce

Moist tender swordfish skewers with a fresh citrus dressing

  • 500g swordfish
  • 125 g butter
  • 1/3 cup fish sauce
  • 2 cm ginger, grated
  • 2 spring onions, thinly slices
  • 1/3 cup freshly squeezed lime juice
  1. Cut into squares and thread onto skewers (I use large metal skewers).
  2. Grill the skewers over hot coal.
  3. Melt the butter in a pan and cook until golden. Remove from heat.
  4. Add remaining ingredients and stir.
  5. Serve immediately by spooning over fish.
