Swordfish Skewers with Burnt Butter, Ginger & Lime Sauce

Moist tender swordfish skewers with a fresh citrus dressing
Ingredients
- 500g swordfish
- 125 g butter
- 1/3 cup fish sauce
- 2 cm ginger, grated
- 2 spring onions, thinly slices
- 1/3 cup freshly squeezed lime juice
Method
- Cut into squares and thread onto skewers (I use large metal skewers).
- Grill the skewers over hot coal.
- Melt the butter in a pan and cook until golden. Remove from heat.
- Add remaining ingredients and stir.
- Serve immediately by spooning over fish.
