Mint Salad Dressing
Recipe by Jo Feehan - My Second Helping
A deliciously fresh, zingy dressing perfect for salads.
Ingredients
- 1 cup mint leaves
- ¼ cup olive oil
- 2 tbslp white wine vinegar
- 2 tblsp lemon juice
- 1 spring onion
Method
- Mix all ingredients in food processor on medium speed until smooth.
- Pour into jar.
Your mint dressing should last in the fridge for up to a week.
