Smoked Eel with Mushrooms

Ingredients
- 1 smoked eel
- 200gr Swiss brown mushroom
- 1 tin anchovies
- 1/2 bunch tarragon
Method
- Peel the eel and Place in 180c oven for 30 min
- Break up the meat from the bone and spread onto a plate.
- Slice the mushroom very thin with a mandoline even.
- Spread them to cover the plate and finished with the anchovies chopped in, half the oil from the tin and the chopped tarragon
- Place the plate in the oven for 5 min, drizzle with olive oil, garnish with herbs and serve.
