Zucchini Carpaccio

Fresh and light and a perfect accompaniment to a Summer meal, this zucchini carpaccio looks as good as it tastes.

Serves 4.




  • 3 zucchini, thinly sliced preferable with a mandoline
  • 1⁄3 cup olive oil
  • 1⁄2 lemon juiced
  • Salt & pepper
  • 2 tbs white balsamic vinegar
  • 1 heaped cup rocket
  • Chilli flakes to taste
  • 1⁄2 cup shaved parmesan

 

  1. Arrange and layer zucchini and rocket on a platter vertically.
  2. Whisk together the olive oil, lemon juice, salt and pepper and white balsamic vinegar.
  3. Spoon the dressing over the zucchini and rocket and sprinkle with chilli flakes and parmesan to serve.
