- Whisk the egg with the orange rind, salt and pepper.
- Grate the garlic into the egg mix then continue to whisk, pouring the oil in slowly so the mix thickens slightly.
- Break the leaves off the radicchio and use them to line a shallow bowl.
- Break the cos lettuce leaves into small pieces and place in the bowl.
- Halve the figs and add to the bowl then crumble in the blue cheese and pour the dressing over the salad.
Fresh Fig Salad

A delicious fig salad with the zing of blue cheese and orange zest.
Ingredients
- ½ cos lettuce
- ½ radicchio lettuce
- 10 figs
- 100g mild blue cheese
- 50g pine nuts
- 1 egg
- 2 tbsp olive oil
- 1 glove garlic
- ¼ tsp salt
- ¼ tsp pepper
- ½ tsp orange rind
